Preheat the panini grill. Meanwhile, halve the apricots. Put in a bowl and pour boiling water until they are underneath. Let 10 min. Drain.

In the meantime, pick the leaves of basil and fresh mint from the stalks. Cut the mozzarella into slices. Cut open the paninis in length.

Heat the butter in a frying pan and fry the apricots with the sugar for 1 min on a high heat.

Cover the bottom halves of the paninis with the prosciutto, apricots, the basil, the fresh mint and mozzarella.

Season with pepper and cover with the top half.

Place the paninis under the panini grill and grill for 3 minutes until the mozzarella is completely melted. Serve immediately.
