Remove the chicory leaves. The hard core is not used.

Remove the hard stalks from the watercress, spread along with the praise over a large flat dish.

Divide the raspberries and duck breast fillet over them and drizzle with the balsamic icing and the oil. Sprinkle with freshly ground pepper and serve.
