Roasted aubergine dip with goat's cheese
A nice Mediterranean recipe. The side dish contains the following ingredients: eggplant, soft goat cheese (crumbled), garlic, parsley (chopped) and tabasco.

Light the barbecue. Make a few slices in the aubergine with a knife. Grill the aubergine for about 40 minutes. Regularly. Allow to cool.

Halve the aubergine in the length and scoop the flesh from the peel. Puree the pulp in the food processor and add the goat's cheese. Mix to a smooth puree.

Put the puree in a bowl. Squeeze the garlic and stir in the puree with the parsley. Season with tabasco and salt. Cover the dish and allow the flavors to withdraw for 30 minutes. Tasty with grilled pita bread and with grilled vegetables.
