Grilled salmon with grapefruit, tomato and basil.

Cut the tomatoes into quarters, remove the seeds and cut the flesh into small cubes (brunoise).

Use a sharp knife to cut the skin and the white skin of the grapefruit.

Cut the segments of flesh from the membranes, so that you can easily remove the flesh with your knife. Cut the segments into pieces.

Remove the leaves from the basil and cut the half finely.

Make the antiboise: squeeze the lemon. Mix the tomato with the grapefruit, the basil and the oil. Season with salt, pepper and lemon juice.

Brush the salmon with the rest of the oil and sprinkle with salt and pepper. Heat the grill pan and grill the fish for 8-10 minutes, halfway through.

Place the fish on a dish and put the antiboise on it. Garnish with the rest of the basil.
