Spicy chicken fillet with mango
Chicken fillet piri piri with mango, ginger root, spring onion, coriander and coconut milk.

Cut the chicken fillet into thin strips and put in a bowl. Peel the mango, cut the flesh into slices along the pit and cut into small pieces.

Cut the spring onion into rings and peel and grate the ginger. Slice the coriander.

In a different bowl, mix the mango, 1 tbsp ginger, the spring onion and 1 tbsp coriander. Pour the coconut milk into a container.

Heat the oil in a gourmet pan. Let the chicken strips scorch around.

Put some mango mixture through and fry for 3-4 minutes. Change regularly.

Add the coconut milk and allow to reduce slightly. Season with salt and pepper.
