Trout with Spanish almond butter
A tasty Spanish recipe. The main course contains the following ingredients: fish, almond shavings, butter (at room temperature), garlic (pressed), ground cumin (djinten), roasted peppers ((from pot), finely minced), trout, lemon (scrubbed) and olive oil.

Heat a small frying pan without grease and roast the almonds while stirring over medium heat until golden brown. Shake them on a plate and let them cool slightly.

Stir the butter gently in a bowl. Mix the garlic, cumin, roasted peppers, cooled almonds and salt and pepper to taste. Store in the refrigerator until use.

Preheat the barbecue or grill pan. Sprinkle the outside and the abdominal cavity of the trout with salt and pepper. Cut the lemon into thin slices and put them in the abdominal cavity of the fish.

Brush the fish with oil and, if prepared on the barbecue, lay them between a fish clamp. Grill the fish in about 15 minutes until done. Turn the fish halfway through the grilling time.
