Book review: Kooltje

When you think of cabbage you probably think of stew. Or at least a hearty winter food. You may even think cabbage is old-fashioned. 'Kooltje' will certainly change that. This time, the authors of the bestsellers 'Overmoutje' and 'Nootje' pay tribute to the cabbage. A book of cheerful and modern cabbage recipes is the result.

All of a sudden the old-fashioned kale was hip and was even called a superfood. Not surprising, because the kale is full of vitamins, protein and fiber. However, kale is not the only variety that is put in the spotlight in Kooltje. The book is about all coal that is cheap and easily available in the Netherlands and Flanders. Think white cabbage, red cabbage, pointed cabbage, green cabbage, broccoli, cauliflower, romanesco, Brussels sprouts, palm cabbage, Chinese cabbage, bok choy and kohlrabi. So many types of cabbage.

Cabbage contains 70 surprising and simple cabbage dishes for every moment of the day. A breakfast with cabbage does not immediately appeal to me, but the granola with kale (kale-nola), red cabbage cake with raisins and cauliflower waffles certainly do not look bad. The kale oatmeal with banana and beet is a bridge too far for me, but I may come back from that. The lunch dishes are almost all recommended. I am enthusiastic about the red cabbage piadina, the cauliflower burgers and the bok choy and red cabbage spring rolls. The kohlrabi carpaccio is also creative. Or what about a broccoli librownie, cauliflower bitterbal or pak soy pancakes as a snack.

Experimenting

Of course the stews are included at dinner, but much more interesting are the spit cabbage risotto, kohlrabi fries and Brussels sprouts strudel. Authors Pascalla Bonnier and Mathijs Kok have started experimenting a lot, resulting in an enormous diversity of dishes. The chapter on canning is a nice ending and ensures that you can really eat cabbage all year round. The recipes are clear, accessible and therefore easy to do. You may not have all ingredients in your kitchen cupboard as standard, but all supplies are readily available. Many recipes come with a tip or personal reminder, which makes Kooltje a very nice book to â € readâ € ™.

In addition to recipes, the book also explains why cabbage is so healthy now, what the differences are between the types of cabbage and how you can grow, buy and prepare them yourself. The so-called 'Cabbage for dummies'. Kooltje is completely finished thanks to the now characteristic light photos in which the product or dish really jumps off the page. Bonnier and Kok are now convinced and have started a real coal garden. Cabbage can be done at any time of the day. Even if you have to get used to the cabbage a bit or get no further than stamppot, Kooltje is a nice book with a lot of healthy different-than-usual inspiration.

Pascalle Bonnier studied Product Design at the Utrecht School of the Arts. She made documentaries (including Mother Grunberg) and books. Mathijs Kok is a filmmaker, photographer and designer.
