  1. 800 grams of beef steak or marinated beef steak 1 onion 1 small winter carrot 2 celery stalks 8 tablespoons of olive oil or 100 grams of butter 300 ml of red wine 1 can of peeled tomatoes (or 400 grams of fresh tomatoes) 2 bay leaves 3 sprigs of thyme ½ tablespoon of dried oregano ½ teaspoon salt freshly ground pepper 100 grams of pitted black olives basil or parsley

Prepare Cut the meat into cubes of about 3 cm. Pat the meat dry and let it come to room temperature for about 15 minutes. Chop the onion, winter carrot and celery. Heat the olive oil or butter in a frying pan and fry the chopped vegetables for 3 minutes. Add the meat and brown it all over. Pour the wine and tomatoes into the meat. Add bay leaves, thyme, dried oregano, salt and pepper. Let the meat simmer gently for 2-2 ½ hours. Stir occasionally and make sure that it does not bake dry. In that case add some more water or wine. Add the olives in the last 10 minutes. Remove the bay leaf and thyme from the sauce and season the sauce with salt and pepper, if desired, and trim some fresh basil on top.
