Amuse of avocado with tomato and tortilla chips.

Directions

  1. Cut the tomatoes crosswise at the bottom. Immerse them for 20 sec. in boiling water. Allow to cool. Peel off the skin and cut the flesh into cubes.
  2. Season the tomatoes with olive oil, salt and pepper.
  3. Cut the avocados half way through. Remove the kernel and scoop out the flesh with a spoon from the peel. Cut the flesh into cubes.
  4. Cut the fresh coriander finely and squeeze out the lime.
  5. Season the avocados with the sour cream, lime juice, coriander, chilli flakes and salt to taste.
  6. In low wide glasses, spoon a spoonful of the avocado mixture and then a spoonful of the tomato mixture. Insert some tortilla chips.
