Mozzarella packages with grilled vegetables

Halve the bread roll mozzarella. Grate the yellow skin of the lemon and squeeze out the fruit.

Marinate the mozzarella in half the juice, the grater and pepper and salt.

Cut the bell pepper into strips and the onions into thin parts.

Cut the aubergine lengthwise into thin slices. Cut a thin slice from the bottom of the asparagus tips.

Mix the eggplant in a bowl with asparagus tips, paprika, onion and oil. Heat a grill pan and toast the vegetables in 3-4 portions al dente.

Put the vegetables with the leaves of the thyme in a bowl and scoop with the rest of the lemon juice, (freshly ground) pepper and (sea) salt. Keep warm under aluminum foil.

Remove the mozzarella from the marinade and pat dry with kitchen paper. Wrap each piece in 2 slices of parma ham, so that the mozzarella is completely covered.

Heat the oil in a frying pan and fry the packets around on medium heat for 4-5 min. Until the ham is crispy and the mozzarella begins to melt.

Divide the vegetables over the plates together with a mozzarella package. Bon appétit! .
