How does the process go from the diagnosis of gluten intolerance? What problems do you encounter and how can you deal with the allergy practically.

And then suddenly the diagnosis is there. You think now the whole story will get moving, but that was very disappointing. The pediatrician still advises to go to a dietician, but since this must be paid for yourself (no reimbursement) and there are many stories about dieticians who know less about gluten-free food than the patient / parents, this does not really offer the help after which you're looking.
Biggest influence

The biggest influence on life has the continuous hand washing, a gluten-free corner in the kitchen and the eating and baking of normal bread. Keeping the gluten-free products separate will completely change the home.

Bread

Bread is a particularly difficult product. After buying pre-packaged bread and bread from the freezer a number of times, we started baking ourselves. Experience has shown that the first loaves usually fail completely. But after a lot of trying and mixing the different types of flours available, this effort usually produces the desired result at some point.
Pastas

Macaroni, spaghetti, lasagna, all these products contain gluten and are therefore no longer allowed. Fortunately, the AH and health food stores in particular have a large selection of gluten-free pasta. But then you come to the sauces. Nearly all store-bought sauces contain wheat or other gluten-containing ingredients. Fortunately, ketchup offers a solution, although one brand can and the other cannot. We have recently started making pasta sauce ourselves and this is going fine. There are various nice recipes to find from bolognese sauce to cheese sauce to cream sauce. Making these sauces is perfectly manageable in terms of time, and making something extra for the freezer works great.

Cookies, chips and candy

Finding gluten-free biscuits in the shop with regular biscuits is impossible. Really all cookies contain gluten with the exception of meringues. Again, the AH and the health food stores have a wide range of gluten-free biscuits so this shouldn't be a problem.
Birthday and treats

We have now had our daughter's first gluten-free birthday. With homemade gluten-free cake (gluten-free cake base, meringue cake with fruit and whipped cream), snacks and treats. It is especially nice if the person who needs to eat gluten-free can also eat everything.
Fries and snacks

French fries are of course no problem, as long as they are baked in a separate deep fryer in which no gluten-containing snacks have been baked. Now all standard snacks in the supermarket contain gluten (breadcrumbs in burgers, croquettes and frikadellen). McDonald's is an excellent solution for this, although our local snack bar is also very well aware of the gluten allergy content and also bakes the fries separately. So we only have a fryer for the fries and bake a gluten-free frikadel in this fryer (available at Jumbo and some health food stores). We bake the non-gluten-free frikadellen in a frying pan.
