Green bean parade

Snow peas

  1. You may not expect it, but snow peas are the young pods of the pea plant. They are harvested very young, because then the skin is still young and tender and no skin has formed in the pod. The peas are then barely developed. When buying fresh snow peas, pay attention to the structure. They should be fresh green and have a crispy skin. You can keep them in the refrigerator for several days, preferably in a plastic bag with holes. You can cut the ends off before preparing. Some pods have threads along the edge that you can pull off.

Sugarsnaps

  1. The sugar snaps are slowly gaining ground. They look a bit like snow peas, but are more rounded and taste sweeter. Actually they are not yet ripe when they are harvested. The seeds are still in the pod, but that just adds flavor. Sugar snaps should also be a nice green when you buy them. They will keep for about two days in the refrigerator. Like pods, you can cut off the top and remove the thread at the edge.

You can then easily detach the peas and rinse with cold water. You need 500 grams of pods for 250 grams of peas.

Garter

  1. It is the most exotic of this list. We know garter mainly from Suriname. It is a long, green pod that resembles a stretched green bean. In the tropics, garter can grow up to a meter long, the Dutch variant has to do with 14 to 25 centimeters. The taste is spicier than that of green beans. Garter contains folic acid, potassium, vitamins B1 and B6. Garter is best bought young, juicy and firm. It can be kept for several days in a cool place (not in the refrigerator). As with pods and sugar snaps, it is wise to remove the tips and pull off any stiff wearing. Count at least 250 to 325 grams of long beans per person to get 250 grams of vegetables per person.
