From grandmother's time

  1. The use of clarified butter is anything but new. Our ancestors were already quite busy with it. The reason was mainly practical, because the refrigerator did not exist yet. By "clearing" the butter, it could be kept for much longer at room temperature. This is in contrast to regular butter, which turned rancid too quickly.

What is clarified butter?

  1. The basis is cream butter which is then 'clarified': separating the remaining solid components (including proteins and milk particles) and water from the butterfats. This is done by heating the butter at a low temperature without letting it burn.

  1. The water evaporates and the solids still present float to the top or sink to the bottom. After this, they can easily be scooped off or left behind when draining. What is left is butterfat.

PURE fat

  1. Clarified butter is actually nothing more than pure fat. But not in a negative sense .... It is a type of fat that is naturally loosened and isolated from surrounding nutrients. The result is a very pure form of fats, without milk residues and yet packed with nutrients!

  1. Maybe you have heard of ghee? This is a commonly used type of clarified butter from India. The two are often thought of as one and the same, but ghee (literally translated 'liquid gold') has a different preparation method and its own unique taste.

  1. It is heated more extensively, so that the moisture content is even lower. In Indian and Pakistani cuisine, it is loved for its flavor and beneficial powers. Also here in the Netherlands it is available in more and more places.
