What is romanesco?

A more common name for romanesco is turret cauliflower. This vegetable has a yellow-green color and looks suspiciously like cauliflower. This vegetable used to be called the "broccoli of Rome".

For a number of years this vegetable has only been known in the Netherlands, but in the more southern countries it has been a delicacy for years! This vegetable is only available between July and November! We just have bad luck in the winter spring! It is a very decorative vegetable and its shape makes it possible to prepare beautiful meals! It does take some creativity! The taste of this vegetable is slightly close to cauliflower, but these vegetables taste much softer.

How to eat? Basically the same as with a cauliflower. Cut away the leaves and cut the turrets (florets) from the stump. Wash the turrets and cook them, for example.

When you buy this, it is important that all turrets are connected. If not, I would leave it and go for another one! Outside the cabbage cupboard it is good for a little over half a week. Just make sure to keep it in a cool place as otherwise vitamins and minerals will be lost!
