Make homemade coconut yogurt!
-
Yogurt is an ideal snack or dessert for many people. Fresh, healthy, eatable in countless ways: it couldn't be better. Unfortunately, there are also people who cannot or would rather not eat yogurt. Lactose intolerance, for example, can be a very good reason for that. Soy yogurt is also not always a good alternative, because not everyone likes to eat a lot of soy.

-
Does that mean you should leave the yogurt for what it is? Fortunately, that is not so bad: there is a third alternative. Coconut yogurt, made from coconut milk! Today we tell you what it is and why it is so healthy. And we also show you that making coconut yogurt doesn't have to be that complicated at all!
Fermented is healthy
-
The main reason coconut yogurt making is so healthy is that this product is fermented just like regular yogurt. That is, it functions as a probiotic for the bacteria in your intestines. Good news, because the same gut bacteria determine much more of your health than many people know. They also partly determine what you feel like, or how your mood is.

Every reason to pay enough attention to your gut, in other words. Yogurt is an excellent means for this. Other fermented products are of course always good: think of sauerkraut, tempeh, kombucha and miso, for example. However, many of them are a bit more exotic and therefore less popular than yogurt.

Coconut yoghurt healthy

However, the fermented coconut yogurt base isn't the only reason it's so healthy. The coconut itself is certainly a plus for your body. Coconut products - not just coconut milk, but also coconut water and desiccated coconut, for example - are packed with healthy substances.

One of these is lauric acid. This works as a natural remedy against bacteria, fungi and viruses, which means that coconut effectively stimulates your immune system. Coconut also contains vitamins and important minerals such as magnesium, potassium and phosphorus. Finally, it is said to moisturize skin and hair, preventing wrinkles and split ends, for example.

Coconut yogurt from the supermarket
-
With all those benefits, it seems like a tight plan to run straight to the supermarket and get a bowl of coconut yogurt. However, that is not yet as obvious as it seems. The first pitfall is that a lot of 'coconut yoghurt' in the store is not real coconut yoghurt at all. It is often plain yogurt with some grated coconut stirred in it. Also very tasty, but not handy if you didn't want to eat yogurt.
-
Other supermarkets do sell coconut milk yogurt, but it is often very expensive. Not immediately strange, but very unfortunate. Because why would you spend five euros for a bowl of yogurt when you can make it yourself much cheaper? Fortunately, making coconut yogurt is not as complicated as you might think.

Note: work very cleanly!
-
A little warning before we get started: be a little careful if you make coconut yogurt yourself. It is certainly not complicated, but you do want to work really cleanly. You are actually going to grow bacteria - in a healthy and controlled way, but still. In addition, you want to make sure that those bacteria do not suddenly start doing crazy things.

So make sure you only use pots that have been boiled and well washed beforehand. Also wash your hands well when you get started. It does not have to be an operating theater, but attention to good hygiene is really necessary during fermentation. This way you prevent that coconut yogurt from suddenly turning out a lot unhealthy!

Coconut yogurt ingredients
-
On to the ingredients then. There are only three: coconut cream, probiotics and agar agar. Choose coconut cream (also called santen) to which nothing has been added, so it really consists of 100% coconut. You don't want all silly sugars or preservatives getting into your coconut yogurt!

Furthermore, many people find it difficult to find or choose probiotics. They are often for sale at stores where you can also get other supplements. For example, the Orthica brand has the probiotics Orthiflor Original, but there are many more.
-
In any case, choose a probiotic that comes in capsules. That is easier when making the coconut yogurt; you don't have to crush pills.
Coconut yogurt recipe
-
For the coconut yogurt, take 200 grams of coconut cream and pour 350 ml of boiling water over it. Let stand for about 15 minutes to let the cream melt. Stir until a smooth paste and let cool to lukewarm temperature. Add half a teaspoon of agar agar.
-
Open two capsules of probiotics and mix the contents - not the capsules themselves! â € “through the coconut. Pour the whole into a clean weck jar with a capacity of at least 0.75 liters. Place it in a warm place for 24 hours, for example near the heater. Shake occasionally, but do not open the jar. The mixture will stay thin until you put it in the fridge for 24 hours.
-
The yoghurt is then ready! Note, there is probably some pressure on the jar, so open it carefully. You can now store the coconut yogurt in the refrigerator for about five days.

How do you eat coconut yogurt?
-
Coconut yogurt tastes surprisingly much like regular yogurt. Of course you can taste the coconut, but that sour taste of the fermentation is certainly also present. Coconut yogurt is often slightly heavier than the cow's milk yogurt that you are used to. Getting rid of an entire pot in one go is therefore a challenge!
-
It is best to eat a few spoons with, for example, fresh fruit. Mango and pineapple go well with the tropical coconut flavor, but forest fruits, for example, are also a great combination. Also an option is homemade granola. And of course you can also use the yogurt in smoothies, for example, with which you can prepare a quick breakfast!
