Sushi may be fairly new in the Western world, but the history of sushi dates back to the 4 th century before the beginning of our era. At that time, in Southeast Asia, it was not yet perfectly possible to preserve freshwater fish for a longer period of time. That is why the fish was placed in boiled rice.
